This fixes the ontology version used in the lab deployment.

It also fixes the missing trust anchors.
It relies on the root folder if absent in the ontology folder

Finally, it adds explanations on how to use the APP_BRANCH variable.
APP_BRANCH=main will have production trust anchors
APP_BRANCH=development will have non EV SSL certs allowed
